十六 JU-ROKU (16) is where depth meets elegance in a single bowl. First-flush tea leaves from three distinct cultivars — grown in Kirishima's mineral-rich volcanic soil — are carefully hand-harvested and masterfully stone-milled to preserve their full spectrum of flavor, color, and nutrition. This specialty grade organic matcha delivers a layered experience unlike any single-origin variety.

Blending three cultivars creates a complexity that no single variety can achieve alone. Each cultivar contributes a unique character — one brings sweetness, another depth, and the third a lingering finish. The result is a matcha that unfolds with every sip, revealing soft white chocolate sweetness, rich nori-like umami, and a smooth, creamy body. USDA and JAS organic certified.
Tasting Notes
Soft white chocolate on the opening sip, layered with rich nori-like umami and a hint of toasted chestnut. The finish is clean and creamy with a gentle sweetness that lingers. Vibrant emerald-green color with an inviting vegetal aroma.
How to Prepare
Usucha (thin tea): Sift 2 g (1 tsp) into a warmed bowl. Add 70 ml of 80°C water. Whisk briskly with a chasen in an "M" motion for 15–20 seconds until a fine froth forms.
Latte: Sift 2 g into a cup. Add 30 ml hot water and whisk until smooth. Top with 150 ml of steamed milk or plant-based alternative.
