Veil of mist, infinite echo.
JU-ROKU is shaped by the highland mists of Kirishima and three cultivars grown on volcanic earth. The first sip opens with the signature aroma of Asahi, a young-bud fragrance often called incomparable. Rich umami follows, long and unhurried, and settles into a silken finish without bitterness.
Tasting notes
A floral young-bud aroma from the Asahi cultivar, deep umami and a silken texture with no bitterness. Each temperature tells a different story: cooler water brings out sweetness, hotter water intensifies umami. Vivid emerald green, with an exceptional froth.
Why it stands apart
Our signature organic Specialty matcha. Grown at elevation in the highland gardens of Kirishima, Kagoshima, the shade-grown leaves develop remarkable depth and aroma. Asahi anchors the blend with its celebrated fragrance, while the supporting cultivars build layers of umami and sweetness. USDA organic certified and stone-milled to order.
How to prepare
- Usucha (thin tea): whisk 2 g with 70 ml of water at 80°C.
- Koicha (thick tea): 4 g with 40 ml of water.
- Latte: whisk 2 g with 30 ml of hot water, then add steamed milk.
Experiment with temperature: this matcha rewards curiosity.

Terroir & Tasting notes
Terroir
ORIGIN · 土地
— volcanic soil / mist / spring water / luminous green
In the mist-covered highlands of Kirishima, morning fog veils the fields each day, acting as a natural screen that preserves theanine and deepens sweetness. Shirasu volcanic soil — formed by eruptions 29,000 years ago — filters the purest spring water through mineral-rich layers, nurturing leaves of exceptional clarity and depth. Sharp shifts between warm days and cool nights concentrate umami in every leaf.
CULTIVAR · 品種
— Asahi / Kirari 31 / Saemidori
Three cultivars. Three dimensions of excellence. One bowl.
- Asahi, the pinnacle of tencha cultivars, offers profound umami, a vivid jade green, and a long, graceful finish. Its harvest window is among the shortest of all cultivars — rarity is intrinsic to its nature
- Kirari 31 imparts smooth mellowness and aromatic clarity, perfectly complementing Asahi's depth
- Saemidori provides the highest theanine of all cultivars — creamy sweetness and vivid green that lifts Asahi's richness into luminous clarity
ROASTING · 火入れ
— gentle roasting / polish / clarity / craftsmanship
Stone-milled at low speed to preserve Asahi's delicate floral fragrance, generating silky, dense particles that carry the full character of each cultivar without loss.
Tasting Notes
Asahi's incomparable young bud fragrance opens with quiet nobility, layered with creamy umami and vivid green sweetness, settling into a long, velvet resonance that lingers in stillness.
Top : Noble bud fragrance & vivid green — rare, aromatic, alive
Mid : Creamy umami & silken depth — Kirishima mist in three voices
Finish : Long velvet resonance — graceful, lingering, devoid of bitterness

Serving Suggestions
Koicha Recommended
Traditional Koicha
- Place 2g of matcha into a tea bowl.
- Pour 30–40ml of hot water at 60°C (140°F) or below and whisk until silky smooth.
- Serve immediately. Allow the bowl to rest briefly — Asahi's fragrance deepens as it opens.
NOTE
Serve at 60°C or below. Asahi's rich fragrance and Saemidori's sweetness emerge in their most refined, pure form. A bowl shaped by Japan's finest tencha cultivar, Kirishima spring water, and stone-milling — it is, in itself, the highest hospitality a host can offer.
Iced Matcha Americano
Iced Matcha Americano
- Place 2g of matcha into a tea bowl.
- Pour 30ml of hot water at 70°C (158°F) and whisk until frothy.
- Pour over a glass filled with ice.
- Add 100–120ml of cold water and stir gently.
NOTE
Flash-chilling clarifies Asahi's delicate fragrance, leaving only clean, resonant umami. Kirari 31's smooth finish settles the drinking experience at cold temperature — a modern cup with a quietly lasting echo.
Premium Matcha Latte
- Place 4g of matcha into a tea bowl.
- Pour 30ml of hot water at 70°C (158°F) and whisk until smooth.
- Add 100ml of steamed milk at 65°C (149°F) and stir gently.
NOTE
Premium Matcha LatteUse 4g. The layered amino acids of three cultivars hold their definition even within milk. Saemidori's sweetness and Asahi's aromatic depth merge with the milk's richness — a depth of matcha the guest has not encountered before.
Brewing Guide
Below 60°C, theanine dissolves at its peak — Asahi's sweetness and umami emerge in their purest, silkiest form. Above 70°C, Asahi's full aromatic presence awakens. One product, two entirely different expressions.
