Structured sweetness — a latte where you truly taste the matcha.
The bridge between Specialty and Ceremonial. Micro-milled for exceptional texture and transparency. Ideal for premium service. A five-cultivar blend from Yame, intentionally combining first and second flush. The sweetness of Saemidori and the umami of Gokou refuse to disappear in milk, while micro-milled uniformity keeps operations stable.
Why NAKAI 211 Ceremonial Reserved
NAKAI 211 occupies a unique position in our range — it carries the depth and refinement of a ceremonial matcha, while offering the versatility needed for high-volume café operations. The reserved grade designation means this matcha delivers ceremonial-level flavor with the consistency and value that professional environments demand. Sourced from Yame, Fukuoka — a region renowned for producing Japan's finest shade-grown tencha.
Tasting Notes
Balanced umami with natural sweetness, gentle vegetal undertones, and a clean, lingering finish. Vibrant jade-green color. Silky, micro-milled texture that whisks to a smooth, frothy consistency.
How to Prepare
For usucha: whisk 2g with 70ml water at 80°C. For lattes: whisk 2g with 30ml hot water, then add steamed milk. Performs beautifully in both traditional preparation and modern milk-based drinks.

ORIGIN · 土地
— alluvial mountain soil / morning mist / 25 years of excellence / structural depth
Yame's mountain terroir at 200–300m elevation — alluvial soil, natural fog-filtered light, and abundant groundwater — forms the foundation of 212's complexity. The same conditions behind 25 consecutive first-prize wins at the National Gyokuro Competition shape every leaf in this five-cultivar blend.
CULTIVAR · 品種
— Yabukita / Saemidori / Tsuyuhikari / Kirari / Goko
Five roles. Five voices. One experience.
Fresh green aroma opens with volatile brightness, moving through floral sweetness and warm umami, anchored by a noble, incense-like depth that holds its presence long after the last sip.
Top : Fresh green & floral aroma — bright, volatile, immediate
Mid : Creamy sweetness & warm umami — five cultivars in structured harmony
Finish : Noble incense depth — present, lasting, felt through milk

Micro-milled for consistent dispersion — no clumping in heat or cold, no dependence on whisking technique. Goko's deep umami holds its presence in milk. Sakimidori's brightness ensures the finish stays light and clean.
